We use this lemon dressing on our salads. When healing the gut, you must avoid vinegar so this is a delicious replacement for dressings typically made with vinegar. Growing up in a Sicilian household, this dressing topped many a salad and variations of it seasoned our meats and vegetables. I’ll post the variations as well, stay tuned.
Simple Lemon Dressing
Juice of one lemon
1 tsp salt
dash of ground black pepper
3 Tbsp olive oil
Stir and adjust seasoning to taste
Optional: 1 tsp dried basil if it will complement your salad.
Tidbit: Contrary to instinct, lemon is considered an alkaline food which is great for balancing the pH environment in the gut.
