Pancake Mix

There are many gluten-free pancake mixes out there these days. And they’re all very good. I think the one that is most easily found at the local markets though is Bisquick’s Pancake and Baking Mix.

I’ve gotta say, it’s very good!  I do make some modifications though. Since we are also dairy-free, I substitute the milk for non-dairy milk.

We also avoid eggs whenever possible. So instead of adding the egg, I mix 1 Tablespoon of flaxseed meal with 3 Tablespoons of water and let it sit for about 7-10 minutes. Then I combine all the ingredients together and get cooking!
