There are many gluten-free pancake mixes out there these days. And they’re all very good. I think the one that is most easily found at the local markets though is Bisquick’s Pancake and Baking Mix.
We also avoid eggs whenever possible. So instead of adding the egg, I mix 1 Tablespoon of flaxseed meal with 3 Tablespoons of water and let it sit for about 7-10 minutes. Then I combine all the ingredients together and get cooking!
